Ingredients:
· 225g unsalted butter, softened
· 225g caster sugar
· 4 large eggs
· 340g self-raising flour
· Zest of 2 lemons
· 4 tablespoons milk
· Juice of 1 lemon
For the drizzle:
· Juice of 1 lemon
· 125g icing sugar
Instructions:
Preheat the oven to 180°C (160°C fan) or 350°F.
Grease and line a 900g/2lb loaf tin with baking paper.
Cream together the butter and caster sugar with a hand or stand mixer for 3-5 minutes.
Beat in the eggs, one at a time, with a spoonful of the measured flour, ensuring each is fully incorporated before adding the next.
Gradually fold in the self-raising flour and lemon zest, alternating with the milk until you have a smooth batter.
Pour the batter into the prepared loaf tin, leveling the top with a spatula. Bake for 45-55 minutes, or until a skewer inserted into the center comes out clean.
