Duffins are a sweet treat perfect for embracing the cosy vibes of autumn, whether for a leisurely brunch, a comforting dessert, or simply to enjoy with a warm cup of tea on a chilly afternoon.
Duffins Recipe

Total Time: 40 minutes approximately
INGREDIENTS
200g caster sugar
125g butter (melted and cooled)
3 eggs
400g plain flour
130ml buttermilk
1tsp baking powder
1tsp bicarbonate of soda
Filling:
12 tsp jam, Biscoff spread or Nutella
To coat:
3 tbsp caster sugar
Pinch of cinnamon
METHOD
1. To prepare the Duffins, start by preheating the oven to 180°C (fan 160°C, gas 4). Lightly brush a 12-hole muffin tin with flavourless oil to prevent sticking.
2. In a large mixing bowl, combine all the Duffin ingredients except the jam or chocolate spread. Use an electric whisk to beat the mixture well until it becomes smooth and free of lumps.
3. Next, spoon about 1 dessertspoonful of the mixture into each muffin hole, leaving approximately a third of the mixture for the top. Create a small dip in the centre of each Duffin using a teaspoon. Be cautious not to make the dip too deep, as this could cause the jam to seep out of the bottom. Add a scant teaspoonful of jam or chocolate spread to each Duffin. Then, top each one with a little more cake mixture, ensuring that the filling is covered.
4. Bake the Duffins in the preheated oven for 20-25 minutes, or until they have risen, turned golden, and feel firm to the touch.
5 If desired, mix the sugar with cinnamon and spread it out on a plate. After allowing the cooked Duffins to rest in the tin for a few minutes, gently roll them in the sugar mixture while they are still warm to coat them. It's important to let the Duffins cool on a wire rack before enjoying, as the jam will be very hot straight out of the oven.
